with the approach of thanksgiving, this seems like a good time to ask this question.

thanksgiving is traditionally observed in many ways, not least of which is the thanksgiving meal featuring turkey, stuffing, potatoes and a host of other things.

one of my very favorite parts of thanksgiving is the stuffing, and that is the subject of this poll.

which is better: stuffing in the bird or out of it?



and unlike my norm, i'll give my answer first.

i like stuffing best when it's got the flavor of the turkey from having been cooked inside the bird. it's how i grew up eating it, well before any awareness of microbes or food hygiene. despite my awareness of the potential risks, i've never once personally witnessed the slightest case of food poisoning or the like, nor experienced dry turkey.

    Hey Silver, definitely stuffing IN the turkey, but have to say that I leave that to my mother...even this year...I am hosting and cooking and she is still making the turkey and transporting it in one of those coolers that plugs in and is a heated cooler (is that an oxymoron?)
    If/when my mom stops cooking that, it will be stove top stuffing with a turkey cutlet for the Mamie family....have a great holiday! M

    My mom stuffs the turkey, but she also makes a big thing of extra stuffing in a pan. It's my favorite part, so she always makes a lot so I can take it home. I'll eat it both ways. It is more flavorful in the turkey, but it's still good the other way too.

    Stuffing is where I break with tradition. I like the fact that the turkey cooks faster when not stuffed, dislike getting intimate enough with the turkey to shove stuffing in it and never ever have I had a dry turkey. I do like the flavor of stuffing cooked in cavity but I compensate for that by using a broth in my oven baked stuffing that is made from the neck and giblets. Never do I get a complaint on the dressing.

    Ed- No one in my family likes stuffing from inside a bird. That holds true from when I was growing up to the addition of my wife's family. I've also heard them mention not wanting to chance the bacteria even if they did like it. We do dressing in the stove.

    Both actually.  But I'm always tempted to roast the turkey unstuffed, only because putting my hand up the business end of a turkey is more than a little distasteful to me.  Stuffing cooked inside the bird has a different softer texture and flavor that I like, but I always bake a separate pan of it.

    Okay stuffing/dressing devotees, is it stuffing if it's cooked in the bird, and dressing if it's baked in a casserole?  Does it matter?

    I personally like stuffing out of the bird....which makes it dressing right?  I do like the flavor of the bird in it though so of course I saute the onions and celery with the neck and giblets....and I throw the neck away but I do keep the giblets in the mix.....but in the bird always makes the damn turkey take longer....but in reality I will eat it either way because I love love love stuffing/dressing, as long as it isn't stove top!

    I like both.  I also have never ended up with a dry turkey by not stuffing it either, I do the same as botoni.

    Thanks Tiz! Eilan.......I love Oyster dressing! I must admit to being anything but traditional when it comes to dressing. Mine might have oysters, ground pork, apple, chopped bacon, raisins, chestnuts, etc. Always lots of sage, celery, onion and even grated carrot.

    Personally I dislike stuffing but when I make it, I 'stuff' it into the turkey. Having said that though, I just read in a Thanksgiving email from Cook's Illustrated that they don't recommend cooking the stuffing inside the turkey. Apparently the turkey cooks much faster without the stuffing and cooking the stuffing inside increases the chance of overcooking the turkey.

    Mimi, should I tell you that I had an Aunt that also hated stuffing the turkey? So much so that she rolled the stuffing into little balls and threw them into the turkey! From a bit of a distance! hehe

    I grew up with both, and we do both for our own.

    For many years now, I cooked the bird and my sister-in-law with help from my wife and maybe my mother-in-law would prepare the stuffing and stuff the bird.

    As well as cook the excess on the side.

    I don't know about flavor, but it just doesn't seem right to not stuff the bird. It's like something missing, you know?

    Out of the bird. I don't put my hand in there for any reason (someone else can get the "stuff" out, thank you very much). Eww. I'm not squeamish about very many things, but that's one of them.

    We always had stuffing outside the bird (I guess my grandma feels the same way I do!) as far as I know. It seems that what you grew up with is usually what you still favor there.

    We always have a big pan of dressing outside of the turkey.  My mom is a master at getting it perfectly moist on the inside and crispy on the top.  We all look forward to it every year.

    There was an incident with stuffing in the bird when I was a kid.  My uncle brought a turkey he had shot himself while hunting.  It hadn't been properly cleaned and their were bugs in the stuffing.  I would have barfed had I eaten it.

    I learned this little trick from a woman at a bus stop, of all places!  She suggested that I use the StoveTop Stuffing mix WITH a chub of pork and some extra bread crumbs.  It turns out well every time.  I put as much inside the turkey as well, because of the extra flavor.

    The stuffing that came out of the turkey this year was sooo good.

    In fact, I was kinda mad at the Mrs. for mixing the oven dressing with the turkey stuffing in the same bowl.
