Looks like we're having meat loaf tonight. Now mind you I don't make the 'traditional' meatloaf consisting of ketchup, hamburger, an egg and a pyrex bread pan. I got the recipe from a cookbook I bought at a church rummage sale and added my own twist to it. I start w/ the standard 1 pound of ground beef then add 1 pound ground pork, 1 cup bbq sauce (add ketchup if not enough bbq sauce), 1 cup diced onions, 2 diced tomatoes, 2 eggs, 1/2 cup minced garlic (Spice World minced garlic rocks) and 1 pound bacon. Mash together (minus bacon), put in greased pyrex baking pan (I use 8x8) then put the bacon on top. It sounds kinda weird but it actually turns out pretty good. It makes enough for everyone (all 6 of us). I guess tonight is just a meatloaf kinda night. It's all prepared - I just need to get it in the pan and then the oven.

    A pound of bacon? Damn! Between the ground meats and the bacon, this puppy must produce about 800 calories per serving. To say nothing about the level of cholesterol. I'd need to have a cardiologist in the chair next to me to eat at your house, I'm afraid. ;)

    LOL. I don't make it too often. For this I pick up the leanest ground beef I can find (96% fat free).

    actually, that doesn't sound bad to me...but maybe i'd chop up some of the bacon and mix it in with the rest....then just lay a few pieces over the top.

    my husband loves bacon.

    This is what we're having for dinner tonite....with a green salad and some garlic bread...

    Summer Garden Tortellini

    8 ounces frozen cheese tortellini 1 large garlic clove, finely chopped (more if needed) 2 ounces thinly sliced prosciutto, cut into strips 2 cups corn (from 4 ears) 1/4 cup unsalted butter

     

     

    2 medium tomatoes

     

     

     

    1/2 cup chopped basil or flat leaf parsley kosher salt fresh ground black pepper crushed red pepper flakes (for that extra zing) italian seasoning

    1. Cook tortelloni in a pot of boiling salted water (2 tablespoons salt for 6 quarts water) according to package instructions.
    2. While tortelloni boils, cook garlic, prosciutto, corn, 1/2 teaspoon salt, 1/4 teaspoon pepper, & crushed red pepper flakes (for that extra zing) in butter in a large heavy skillet over medium-high heat, stirring occasionally, until corn is just tender, 4 to 5 minutes.
    3. Meanwhile, chop tomatoes.
    4. Combine corn mixture and tomatoes in a large bowl.
    5. Reserve 1/4 cup pasta-cooking water, then drain tortelloni and add to vegetables along with reserved cooking water and basil.
    6. Toss well and season with salt, pepper, crushed red pepper flakes, if needed, and Italian seasoning.

    Kitty.....my mother-in-law used to put the bacon slices all around the meatloaf. For me its too much....:-)

     

    This is called Moroccan Chicken.  I copied it from my files.

    I make it pretty often. I add couscous for me but my daughter prefers eating it with garlic bread.

    Its very easy.

      

    6     chicken thighs (or breasts)                        olive oil

    4     zucchini                                                    4  large carrots

    2     large Vidalia onions                                  2  15oz  cans chick peas

    2     28oz  cans diced tomatoes                        2    cup dry white wine

    4     tsp turmeric                                               2    tsp   kosher sea salt

    1     tsp black pepper                                        minced cilantro for garnish

     

     

                                                                                                                                                                                               

    Heat 1 tsp oil in lg skillet medium heat. Add chicken.

    Cook 3-4 minutes until brown.

    Turn over and cook 3-4 minutes on other side.

    Remove and place in a lg roasting pan, peel carrots and cut into lg chunks.

    Add to pan.

    Peel onions and cut into wedges and place in pan.

    Wash zucchini, trim ends and cut into slick slices and place into roasting pan.

    Drain and rinse chick peas and add to pan.

    Add tomatoes and 2 cups wine and remaining ingredients over chicken/vegetable mixture.

    Place parchment paper over and press down. Cover with foil tightly.

    Bake at 375 for 2 hours.

    dang, that's one hell of a meatloaf, 1WK!

    i like bacon as much as the next guy but i think i'd have to draw the line at a whole pound of it in that dish. the use of pork along with ground beef is a nifty idea!

    this is a recipe for curry that i more or less put together out of whole cloth, as it were. in all honesty, i'm pretty happy with it, seeing as it's the only recipe i've ever created.

    I discovered I could mix meats a few months back when I went to make a meatloaf (no bacon this time ... LOL) and was low on ground beef. I had about 3/4 lb of beef and 1/2 lb of ground italian sausage. The two mixed together turned out pretty dang good.
