This is a delicious low-carb recipe that's also low in calories and highly flavorful.
2 sweet potatoes (1 pound), peeled and roughly shredded
1 large tart apple, such as a Granny Smith, peeled, cored, and roughly shredded (for approximately 8 ounces)
2 green onions finely chopped
1 1/2 tablespoons chopped fresh dill
3 tablespoons whole grain pastry flour
3/4 teaspoon salt
2 egg whites
1 1/2 teaspoons olive oil
1/4 cup unsweetened applesauce
2 tablespoons reduced-fat sour cream
1. In a large bowl, stir together the potatoes, apple, green onion, dill, flour, salt, and egg whites.
2. Coat a 10-inch skillet with cooking spray and heat over medium-low heat. Or coat a griddle with cooking spray and heat to medium-low. (**I typically use a griddle so I can cook more than one pancake at a time.)
3. Add 3/4 a teaspoon of the oil and swirl in the pan to coat. **If using a griddle, brush 3/4 to 1 teaspoon of the oil over the surface of the griddle.**
4. For each pancake, drop 1/2 cup of the sweet potato mixture into the skillet.
5. Flatten each with a spatula to about a 4-inch round.
6. Cook for 10 minutes, or until golden brown, turning with the spatula halfway through cooking.
7. Place on a baking sheet and keep in warm in a preheated oven (between 250 and 300 degrees).
8. Repeat with the remaining oil and the sweet potato mixture.
9. Top the pancakes with the applesauce and sour cream.
Makes 7 to 9 pancakes
