These weekend I've accomplished a lot of things that I have been planning to do for a long while.

I woke up early sunday morning.

review my plans for the day.

Went to the nearby wet market and bought ingredients for my recipes and sideline cooking in kgs.

Had been able to save a bit from my salary and stock up the pantry for my new recipes and business ideas.

Next stop: buy my own meat grinder and smoker for the bacon

For a while, I need to own a bike (past overdue) and elecric steamer.

and oh, yeah, I got to cure my very first batch of skinless longganisa. I had 1 kg of lean meat with fat cured for 24 hours and I fry some this morning for taste test. It wasn't bad at all. :)

I brought some and gave it to my adviser for him to criticize and give me inputs later.

Saturday night, I made leche flan using carabao's milk that I bought from the grocery on my way home. It was ok. not as sinfully sweet as that made of condensed milk. Although the consistency is quite a shock being accustomed to the smooth leche flan all my life. When you eat it, it has the consistency of kesong puti ( white cheese), very light yellow color, with the slightest tangy taste of lemon, that you would have thought it was just your imagination. But it's there really. pampawala ng umay.

I didn't have enough time to go to blumentritt and my budget is short. So my ham recipe will have to sit back for a while before it can be tested.

I might be able to make my first batch of embutido this evening. If I'm not too tired.

I had time for gelai only by noon of sunday. That kid is the most effective stress reliever. :>

    really? I could have hired you as one of my taster. :) I'm always on the lookout for people who will try my new recipes to give me advises and general comments about it.

    so, if you love filipino foods, have you eaten skinless longganisa? How would you like it to be? garlicky? sweet and hot? I'm still not yet satisfied with my recipe, I feel like i could make it better..

    yup, you can try it. hmm, I wanted to post pictures but this jurassic computer that I'm currently using is not compatible with my camera phone. sigh.

    lioness: well, the business is just siomai and stuffs. I cooked one batch, send it to my sister's store, and I was surprised to get another order the following day. I have some loyal patrons now. hehehe. they can't have enough of it. :) but since i'm cooking it, every other day, I can't enjoy it anymore, the food have lost it appeal on me. good for dieting though. hehe. of course, you can be my taster too. :P, ikaw pa. wink.

    jedimaster: yay, good. i need someone with iron stomach. sometimes it's not all that good. hehehe. :)

    my brother went to the philippines with the peace corps many years ago to try to eradicate malaria.  he said that he had to tell everyone to spray the walls with some poison that would kill mosquitoes.  the people did spray their walls but it messed the walls up, so they rinsed it off, and it sank under the house, and there were animals under the houses that died from the spray, so the whole project was a big mess, and then when he came back to check on it, nobody was very happy with the whole thing.

    Ginger: I don't know if it has an english word equivalent. but longganisa is a preserved/cured/processed meat much like hams and bacons but different seasonings and preparations. It's supposed to taste garlicky, sweet, hot (if you like it that way), and slightly sour. It's great for breakfast. Here whenever you eat longganisa, it is with fried eggs ( sunny side up) and fried rice. Then you can use "sawsawan" condiments like vinegar with garlic and onion or plain ketchup, or tomato.
    Different regions/cities, different ways of preparation. That's why it can have different tastes. :)

    hey ginger, I did a quick google search and I found out that longganisa is called "filipino style sausages". It's skinless because it's not wrap. the meat is rolled in a wax paper, sausage like, then allowed to cure for 24 hours minimum. After that, it will maintain that shape and it can be fried ( remove the wax paper first) without disentangling..there I hope my english did not confuse you further. I need to improve my vocabulary. haha.

    skinless longganisa, garlic rice, sunny side up egg and fresh slices of tomatoes with a hot cup of native choco on the side is the best breakfast!!!!
     
    hmmm and leche flan is my favorite... all time favorite.

    ELLA....for me the longganisa would be garlicky....I have a western pallet, but I m sure for many Filipinos the hot sweet would win.
    Do you make a Cassava cake that s special? I really love it.

    botoni: cassava cake? I'm sure I can cook one for you. do you mean that the cassava will have leche flan like topcoatings? yup, it can be done. :) hmm, garlicky longganisa, that's the version from lucban and vigan city. I prefer it to be that way too.

    gingersoul : wait til you hear of our famous "tapang usa" and other sundried delicacies. Then there's adobo and sinigang and kare kare and estupado, laing, ginataang langka etcs. :) Last night, I cooked "sinigang na buto buto" in english -pork spareribs in sour broth. If I can get tamarind fruits I don't bother with the knorr cube seasonings. I'm more of a traditional cook. I use only the most natural and organic ingredients that I can find. You basically boil it with the tamarind juice ( the more, the better) with gabi root crop, "puso ng saging"- banana bud or blossom, tomato, onion, okra, kangkong, radish and seasonings.

    queen: There is always a reasonable alibay to eat some more, right? :)

    I'm up for a bit of everything you've mentioned.  It sounds soooo yummy!!!  You are right, Ella.  It's more fun doing something that you're good at.  I'm good at eating.  Can I come over for supper, lol?
