eggs, anyone? for sometime now i have been contemplating on the mysteries of the egg. it has been such a staple in the filipino breakfast table (and american?--just ordered an egg muffin sandwich for breakfast at mcdonalds before heading for work today) that we just don't wonder anymore why there has to be an egg lying side by side with a plate full of sliced hotdogs, longanissa (filipino sausage) and pan de sal for breakfast ; or think tapsilog, tuysilog, tocilog and chiksilog. during our ilocos trip, the three of us, josh, me and the boyf were treated by our host to a sunnyside up breakfast extravaganza--not just one, but two eggs on top of steaming rice. the kid inside me jumped for joy when i saw the yellow center, barely hiding under the thin membrane that resulted from its contact with the cooking oil. as a kid i had fun times pouring ketchup on top of my sunny before slicing em to pieces and filling up three or four pan de sal ; and of course, stuffing 'em in my mouth later, hehehe. tatay would always have nanay cook 'em for the family midnight snack alongside spam or corned beef (always the sunny for us)... ahh, such fun times indeed. its only later, when i started to get conscious of my looks and started reading health mags and other materials i could lay my hands on, that the realization that too much egg could be bad for the health struck me. true, it is protein-filled but also cholesterol-rich. when tatay's diabetes condition worsened, his cardiologist (as it affects pretty much all internal organs including the heart) limited his egg consumption to twice a week. its an eye-opener indeed. whereas we have eggs for breakfast everyday back then, we now cook em sparingly. there was a time that i avoided eating eggs completely, turning to other sources of protein and going for the greener stuff--soups, salads and vegan sandwiches for maybe about two weeks. the idea sounds enticing but somehow a part of me is revolting, craving for the endearing creamy goodness of that yellow stuff. and besides, whats that article that says otherwise? that there is no actual study correlating egg consumption to heart disease? hmmm... confusion is the name of the game! so i made a compromise. eggs it will be, still. but just twice or thrice a week. after all, moderation should be the key to everything. passing by jollibees and mcdonalds everyday, and looking at their breakfast menus, with every meal having an egg as an item ; every offering a bestseller among the fastfood-going public, i begin to wonder how the filipinos are faring with their health. exactly just how many eggs can a fastfood branch cook up in a week? a truckload full? passing by a balut vendor at night, i also begin to wonder why so many are head over heals with that hairy chick well, it may be too much pondering but exactly how many dishes do we cook up during fiestas (and we have many of them) that involve the egg? creamy, yummy, swirling goodness that never fails to make us swoon. everybody say ahh... :)
