I WAS going to wait to post this. I WAS in a bit of a
funk yesterday over the Virginia Tech tragedy and posts etc. But I am now
feeling better after the support I have received so, here goes.
As a Canadian (and we all know I'm a proud one) I live in a country with a
diverse culture. I am part of the English speaking population of my
country and unlike many of my English speaking country-folk I embrace
everything about my French speaking country men. Especially, traditional Quebec
cooking. I love tourtiere and maple
everything! But my all time favourite is
Sugar Pie (tarte sucre). A warning to
those who love sweets: Take it slow.
This pie can become extremely addictive (I made one a week when I
pregnant with my forth).
This is not my standard recipe but it is a close second. My regular recipe has made it into the abyss of filing that I should be doing. This recipe comes from a Canadian Standard:
Canadian Living from their Country Cooking Cookbook.
Acadian Sugar Pie
This sugar pie is rich and sweet and is best served in very small wedges, topped with whipped cream.
Ingredients:
Pastry for 9" pie
2 cups Brown sugar, packed
2 tbls Flour,
all purpose
pinch Salt
2 Eggs
1 Egg yolk
1 cup Milk
1
tsp Vanilla
Directions:
Roll out pastry and fit into 9" pie plate, trim and flute edges. In bowl,
blend sugar, flour and salt. In separate bowl using electric mixer, beat eggs
and yolk till frothy; beat in milk and vanilla. Stir egg mixture into sugar
mixture till smooth. Bake in 400F oven for 10 minutes; reduce to 350F and bake
for about 35 minutes or till crust is golden brown and filling is set. Let cool
on rack.
