  I think I can help with the pork tenderloin.....If you like mexican food anyway!
  Start by cutting it up into cubes about 1 by 1 inch.....place in roaster.....Cut up a large onion about the same size1 by 1 inch ....put all over pork.....Cover with chopped canned tomatoes....has to be a lot of liquid....so depending on how much pork you start with....usually a couple of large cans will do....season with garlic (lots) salt, pepper, a little oregano, and chili powder (fair amount) cover and cook for 3 or 4 hours at 350 until the meat is nice and tender. Serve with flour tortillas.
   
  This will knock your socks off!

  Simplest recipe for your pork tenderloin? Spread it all over with honey mustard and fennel seeds...and cook it.....its simply delicious.. or you can use any orange glaze if you like...or stuffed it with garlic ... Buon appetito...:-)

  Tin...pork tenderloin is so tender.....you can throw anything with it and it always comes out yummi.......why don't you bake some potatoes with fennel and garlic too? Now you made me hungry....lol..

  Well,since I am supposed to be babysitting my two little nephews I'm really not supposed to be doing much! The little one is asleep and the 4 year old is thinking he is drinking root beer (it's 8:30 pm) when really my bf replaced it with water!!! haha. We're so mean,playing tricks on this little boy. But we don't agree with his mother that he should drink sugar so late! So, I actually have time to kick back and soulcast!!!!

  BTW, the pork tenderloin turned out very good. In fact, I have a difficult time not overeating it.
  
  It took longer than the recipe said (almost twice as long in my oven) and the potatoes were a little over cooked, but overall a win.

  Well, since it's 11:30 at night as I'm writing this, I should be doing... exactly what I'm doing! I guess I could consider going to bed, or I could knit or sew, but this is much more interesting at the moment.

  I have a yummy recipe for pork tenderloin and red potatoes seasoned with garlic and fennell seed.  Very easy and very good.

  I should be doing the paperwork for my part-time job. The good thing about the computer at the library is that you have to log in with special codes and it restricts you to 1 hour a day. Since my internet connection at home is down I have to come here to do a very quick catch up. I have 16 mins left on the computer and then will be allowed no more time on any of the computers (aaaah). But, its good because then I can get down and do what I really SHOULD be doing! hahaha I miss all the peeps at SC! Cant wait to be back! Polar x
