a stray comment by my friend LJ got me thinking about ribs.  there's a couple styles and i happen to favor the way they're made out west, but i'm more curious about find out what folks think of ribs and how they like 'em.

so: how do you like your ribs?  or are you a vegetarian?

hmmmm, ribs! Umm, I'm on the extremes, I either like them drenched in BBQ sauce, or completely dry.  Well done please!

what kind of barbecue sauce?  :>

ed, you're going to start trout- (or rib-)smacking me.  I don't like ribs.

But I do make them occasionally for my husband.  I marinate them overnight with a dry rub and barbecue sauce, then I bake them in a slow oven, with additional barbecue sauce, for a few hours until the meat is falling off the bone.

I have made my own barbecue sauce, but I confess I usually go with a bottled sauce, one that's not too spicy hot.

Ribs? Mine are hidden under.. well they're there somewhere...

Oh wait,  you meant to eat? I'm with Mimi you can keep those ribs for yourself.

I like mine done in a slow oven with plenty of hot and sweet sauce on them. In Chicago, the undisputed champion ribmaker is Carson's. There is no substitute.

Alyss, I always knew you were a woman of discerning tastes. ;)
  • silverwhisper said on Nov 17, 2006....
mimi, alyss, you two are just weird.  that's what i like about you, ladies.  :D

me, i'm more a fan of ribs that aren't sweet, which is variously KC, st. louis or denver style: basically, wherever ribs are made of beef rather than pork ribs.

I've had ribs at Arthur Bryant's in Kansas City and they're good. I still prefer baby back over beef, though.
  • secretlife said on Nov 17, 2006....

    I love babyback ribs.

I like a sweet bbq sauce with molasses and honey-

I don't eat ribs (or fried chicken on the bone). There's just something barbaric and gross to me about gnawing meat off the bone of the animal. Eww.

Ribs always smell soooooo good when they're cooking though!

I had beef brisket and baby back ribs for dinner tonight.  :D

I prefer smoked Kansas City style ribs with a tangy, not sweet, sauce.

Now brisket I like.  Ribs just seem like way too much work.  I don't like to get my fingers all gooey and sticky when I eat.  It's about the only thing I'm kind of prissy about.
  • tbs230 said on Nov 17, 2006....
Silver: What kind of sauce? The only kind there is darling, sweet and tangy, yum! :) I don't know, whatever kind is put on it. Honestly, I've never cooked ribs in my life (not if I want to be able to eat them). I believe it's Craft's Slow Simmered Original BBQ Sauce. (I went to check) ;)
  • lioneljay said on Nov 18, 2006....
MissMimi, you must not be holding your ribs properly. I generally finish a slab of ribs without needing to use my napkin at all.

Of course, I also eat popcorn with a spoon so perhaps I'm not the typical rib-eater. :p
  • MissMimi said on Nov 18, 2006....

LJ, I'll be honest, I'm a little surprised you even eat ribs.  Low-fat is not a term I'd use to describe them.

How about pizza?  Knife and fork or fingers?

  • lioneljay said on Nov 18, 2006....
Mimi, I eat ribs only about once a year now but I used to eat them quite regularly. Pizza is always a knife and fork dish here (remember - it's a casserole according to someone we both know and love).
  • sweetsoul said on Nov 18, 2006....
ok ed I'll help you out...I love ribs...babe back preferably. Don't eat them as often as I used to but still love them. Have to be 'fall of the bones' done to be good. That usually involves boiling them before cooking on the BBQ or putting a dry rub on them and slow cooking them in the oven.

Unlike a number of others...I don't like BBQ sauce on them much.

and LJ if you don't need a napkin you can't be eating them right :)
  • JadeLondon said on Nov 18, 2006....
I don't favor them, myself--don't slip me the gills, yet--unless my father or husband makes them. I don't know why, but I find homemade ribs just taste better. Okay, I am weird.

Here is something else: I only like BBQ sauce if it has been COOKED on the food. I do not like the taste of it beforehand. Perhaps because it is caramelized in the cooking process?

Oh, and I like it sweet (honey or brown sugar)--although I have tried mustard based sauces.

  • silverwhisper said on Nov 19, 2006....
LJ: we all have our preferences.  :>

infernal: it's precisely b/c it's barbaric.  it's primeval, primal.  it's purely about hunger, the act of nourishment through destruction that i love.  it's hunger at its most basic, and i love it.

    super z: i'm jealous.  :p

    CW: mm...thank you, that's awesome.

sweetsoul: thanks!  mm...i agree re: the napkins.  :>

jade: yes, you are, but we like that about you.  :D

Re: napkins or no, all I'll say is that I challenge anyone to fine a morsel of meat on the rib bones when I'm done. :D
