I just got back from a glorious weekend in Helsinki. The weather was sunny and warm plus, and I don't know how this is possible, all the flowers were still in bloom yet the leaves of the trees were turning shades of red and yellow. What a truly beautiful city!
The most interestering food I tried over the weekend (besides the black, salty licorice that is popular in Northern Europe...yes, SALTY licorice!) was a food called maksalaatikko, or liver casserole. The Finnish guy we stayed with called it "liver box", but that just makes it sound incredibly inappropriate, so I'm sticking with the prior name.
Anyway, it's a delicious mix of liver (obviously), raisins, and rice. If you are have some Finnish blood, you've always wanted to go to Finland, or maybe if you just like liver, check out this recipe. Bon appetite!
