Caramel Apple Pie

2 crust pie

Cover the bottom of one pie shell with 1/2c. melted butter .... spread evenly with 1/2c. brown sugar, firmly packed, then sprinkle with 1/2c. chopped pecans..........

6 lg. tart apples (peeled and cored, cut into quarters)

2Tbsp. flour

1/2c. sugar

1/4c. brown sugar

3/4tsp. ground cinnamon

1/4tsp. ground nutmeg

1/2tsp. ground ginger

1/8tsp.salt

1Tbsp. lemon juice

3Tbsp. butter

Put the apple quarters into saucepan with 1/4c. cold water. simmer about 5 -10mins. till tender.cool

fill lined pie shell with the apples

combine remaining ingredients, except butter. .... sprinkle over apples. .... dot with butter.

moisten edges of undercrust. .... adjust top crust. ....pinch the two crust together. cut 6 vents

bake in very hot oven (450) 10 mins. then reduce heat to (350). bake another 45 mins.

    MMI,
    I think I'm going to use your recipe to bake the apples without the crust.  I might substitute some Splenda for the sugar.  I have a bucket of fresh picked apples on the porch.  :-)

    Moon ~ i'm having a sleepless night....well heck, its almost daybreak now, 4something in the morn. anyways, Morning to you or in your case evening! *smile* yup, its apple time and i'm going to go apple crazy. you know an apple is a magical fruit, don't you? oh and....hot apple cider! hey, you best not lean on that hot oven, it could burn you. ;~)

    Secret ~ i got my old cookbook (1957) out to see what i could fix with all the apples so....here is the best apple pie recipe there is!  without a doubt, a scoop of ice cream on top maybe two scoops.

    Ginger ~ well heck, i had to put you in there to make it a perfect pie, don't you know! *smile* yes, apple pie rocks for sure! i also have a great apple dumpling recipe.

    CreativeWoman ~ try this, it doesn't have any sugar in it neither..... make the apple inners, put in a cake pan and add Jiffy white cake mix.... pour straight out of the box on to apples, melt a stick of butter and pour over dry mix, bake till golden brown. too good, it gets crispy.

    MsStar ~ give thanks to the Heavens for such a grand pie! you will like, promise.

    Mixnuts ~ there is an orchard about two miles down the road that has all the apples i need. for me, i love the granny smiths

    Fraggle ~ here is a good, easy flaky pie shell recipe. makes two shells. .... 2c.sifted flour - - 1tsp salt - - 3/4c. shortening or lard ;~) - - 4 to 5 Tbsp. cold water.  combine flour and salt in a mixing bowl. cut shortening until you have a course texture like cornmeal or small peas.... sprinkle water 1Tbsp. at a time.toss mixture lighty and stir with fork.it should be moist enough to hold together.it should not be sticky. shape into two balls and roll (floured surface)
