My parents host a July 4th celebration every year. It's a really big deal in my family. I look forward to it more than Christmas.
Dad has developed quite a reputation for his smoked meats. He's been buying meat and putting it in the freezer for months now. Yesterday, he got it all out for marinating and will do a lot of the cooking today. (My mouth waters as I type this.)
My side of the family all makes an effort to be healthy for the most part, so worrying about what will be there that I can eat is not an issue. We will be having a chocolate birthday cake for my dad though. His birthday is in the latter part of June and he likes celebrating it on the 4th. I'm designated baker this year.
Mom's brother and sister are coming this year. They seem to have rallied around her since the house fire, which is really nice. My best friend is making the three hour drive down for the day. (I think I'm going her way next weekend.) My sister and her family will be there too.
The small town I grew up in is sort of a little fireworks mecca so I can count on an outstanding fireworks display put on by the city. (We can see it from my parents' back yard.) The backdoor neighbors always put on a good fireworks display after that.
It's going to be a lot of fun.
This morning I had unexpected company for lunch. So, I had to rush around and get something cooked. Several people showed up to haul hay. I guess it's only right that I feed them. A little more notice would have been better though. I just rolled with it this time.
I managed to get a little work done on my diabetic blog. I discovered how I could put my Etsy Store on it and how to do a widget for Amazon.com. I think it gave the diabetic blog some more color and makes it more appealing to my eye, at least. If you want to look at, it is here. I also posted my own creative recipe for tuna salad.
I need to run to Wal Mart. Dad has a few last minute things for me to pick up to bring tomorrow. Then I'll be busy in the kitchen for a while making homemade coleslaw, baked beans and a birthday cake.
Maybe I'll work some knitting on the loom in too this evening. I have the cutest baby snuggie on the loom right now. I think it deserves a matching hat. :-)
