Well, it's raining liquid sunshine here today, so I'm considering my lunch options.  I'd like to perhaps get something warm.  Tonight is definately a soup kind of night.  Nothing cozier in my mind than listening to the rain on your roof while  eating some soup at home.

    Assuming chili doesn't count as soup, my fave is potato soup. There used to be a restaurant here called Bennigan's that made the BEST potato soup ever...bacon bits, shredded cheese on top, the works! It was thick and chowder-like and just soooo good.

    I like my own recipes best: fish chowder (or leave the fish out and it becomes potato chowder), or chicken soup (trade the noodles for lentils).  It's a perfect day for soup here too; too bad I don't have anything on hand to make it with.

    CM - I'm not a fan of coconut milk.  I do like Miso and other asian style soups as well, but not more than a good creamy or chowder style soup.

    I love all kinds of soup. I love a good beef vegetable, potato cheese, Italian Wedding soup, split pea. I like it all except for clam chowder (or anything with seafood in it) and broccoli. Blech.

    unique- I make soup all year. My favorite is one that is close to green chili stew made with shredded sirloin, fresh roasted green chili peppers, red potatoes, red peppers, celery, onions, tomatoes, and many spices. I like a good Tortilla soup also. 

    But then, I don't think Ive met the soup I didn't like.

    Lu - I'll make it when I'm there if we can get the stuff for it.  Basically its a creamed soup with broccoli and cheddar.  I like viet beef, will eat Pho and have never tried pumpkin and sour cream.

    but on those cold winter nights when its just me and my Dear... nothing beats the comfort of good thick tomato soup with a grilled cheese sandwich (sharp cheddar).

    I love soup.  Good homemade or homemade-like soup.  Gotta brag that I make great soup!  I learned from a Quebecoise aunt who could transform leftovers into the most wonderful creations.  Favorite soup...hm...that's tough....cream of asparagus has to be it, made with fresh asparagus cooked tender in chicken broth, thickened with cream cheese.  It is heavenly with a hot yeast roll.

    Mom used to make a good poor-man's soup, which is a potato and corn chowder with sliced frankfurters in it, seasoned with onion and bay leaf.  That's another favorite, with Boston brown bread.

    she is Hispanic and i dont much care for Hispanic food (besides enchiladas) so i always cook, stuff like hamburger pie and squash casserole, American food.
    never bothered learning soups, i just buy them but nothing beats home made.

    CM - when I worked at Stanford U they had this little hole in the wall soup place.  A guy would walk down the line and bark out "What!" and you had to answer immediately with what you wanted or he'd skip over you and you were SOL.  This always reminded me of the soup Nazi.

    i'm the fucking customer for christ's sake!
    i took half a second too long and he started walking off for the second time (it was a bar style restaurant, long counter with stools) so i reached over the counter and grabbed him by the collar and said "i'm ready to order" in a super calm voice (i get really calm sounding when i'm pissed, i never swear or yell if i'm actually mad) because he'd done this twice before and i was polite about it. i let him know prevously that his order taking skills were lacking (it was never busy when i came and after taking orders the asshole would just stand around smoking cigarettes) and i needed time to explain my order in detail...

    well any way i let him know i was ready to order and he threatened to call the cops for assualt.

    by the way, i was 16.
    he must have been 30 and twice my size... pussy.

    Ferny:  OMG!!!  Seriously...  Bennigan's potato soup and miso?!!!  Are you sure you're not asian?  Look in the mirror and check...  I think we might have been separated at birth... 

    When Ginger came and visited me, we went to this Chinese restaurant to have dinner one night.  One of the dishes we had was this soup.  I don't know how I would write the name of the dish in English, but it's approximate translation is "mixed-up", or a "hodgepodge".  Sounds like leftover parts, right?  Pretty much. 

    But it's the damn tastiest soup you've ever had...  The broth is hot and spicy, with a menacing red color to boot.  It has these chewy rice noodles in it, and it's filled with all kinds of goodness.  Shrimp, squid, mushrooms, beef, carrots...  Like I said, leftover parts. 

    That soup was fan-freakin'-tastic!  Ginger, can I get an amen?

    Z - yup! I think a person could live quite well of soups every day with the sheer variety of them.

    JodiJo - I had forgotten about hot and sour.  I love it when I have a cold.  It's one of the few that I can still taste with a stuffy nose

    Grape - some of the best soups are "kitchen sink" types.

    Oyster Stew is very simple.  I make mine with oysters, milk, butter, salt and pepper.  It's so good with a few saltine crackers.  I had it a lot growing up.

Money.  Location wouldn't hurt either.  Restraunts have an average life span of about 7 years.  The first year or two they establish themselves, the next 3 years they are profitable, the last two years they go into a slow decline.  You can either reinvent the place or close it after that.

    La Bou has a fabulous Spicy Thai Basil soup.... I think that's what it is called. SO good, but definitely spicy.

    Also, after Thanksgiving my grandma makes a really good homemade turkey noodle soup which is amazing during the winter. Mmmmhmmm mmmm! Now I'm hungry! <<<*searches for nearest sandwhich/soup shop*>>>

    trav - I think by in large that people have opinions about all of those things.  Qualified or not.  But the difference is whether or not people feel qualified or enough trust to put those opinions out there.  If you pick something non-threatening but fun, people are more willing to share.  And ..... I like soup.

    Java....you ask for a good Clam Chowder Soup?

    There it goes:

    1/4 cup Olive Oil
    3 Tablespoons Parsley, fresh, chopped
    4 Garlic Clove, finely chopped
    2 Green Onion, tops and all finely chopped
    1 Red Chili, small, seeded and finely chopped
    1 pound Clams, fresh, shucked, drained and chopped
    1 can Tomato, imported pear-shaped (28-ounce can), drained
    1/2 cup dry white Wine
    1 cup Ditalini, uncooked (thimble-shaped pasta)
    8 cups Water
    1/2 teaspoon Black pepper
    1 1/2 teaspoons Salt


    Heat oil in a 4-quart Dutch oven over medium-high heat. Saute' parsley, garlic, onions and chili in oil.
    Stir in clams. Cover and cook for 5 minutes.
    Process tomatoes in food processor or blender until finely chopped. Stir tomatoes, water, wine, salt and pepper into clams. Heat to boiling. Reduce heat. Cover and simmer for 40 minutes, stirring occasionally.
    Stir in Ditalini. Cover and cook for 10 minutes or until Ditalini are tender.

    Now, when my mom would make this soup in the summer she would put it in the fridge to cool down for maybe one hour (eaten the next day was even better)...and then we would eat it with some chilled white wine and bruschetta (but only if she would not use the pasta...we never eat bread with pasta together and if you let the soup stay too long the pasta get all mushy...not good).

    In the wintertime, its just great nice warm, with red wine.
    Also, you can make it thicker or more liquidy controlling the amoun of wine and water you use.
