Update:

Well, FutureGoddess is still working to become a future goddess.  I have been very busy - for anyone who read my "goal" plan that was posted when I first came here more than a year ago - it only took a year to BEGIN implementing my goals...LOL.  However, no complaints here.  Only good things.  I have been working out, losing weight, job hunting and doing some odd jobs here and there.   And catching up with a lot of old friends with whom I hadn't been in contact in years. 

My New Obsessions:

Since the new year began I have been eating almost nothing but fresh veggies, fresh fruit, lean protein etc.  So as a result of finally implementing this little change in my life, two things have happened:  One - I have lost 10 (of the 45) pounds since January 1st, and two - I have been getting bored with the fruits and veggies which I was used to eating.  So now, I am eating new veggies for my palate. 

I know this is not an "unusual" veggie - but I am now totally obsessed with it!  I had never had it before yesterday and someone suggested that I try this - What is it you ask? 

Spaghetti Squash!!! 

This is the coolest veggie I have ever made.  I loved the experience for the first time of scraping out the "meat" of the vegetable and having it turn into spaghetti looking strands.  I was like a little kid!  It was SO COOL!!! 

BTW - I am now seeking cool and unusal recipes for this veggie - so if there is a low fat, low cal recipe you love, please post below.

And my second obsession: 

Zip Lock Steam and Fresh Bags!

Dinner tonight was so easy to make - fresh asparagus and frozen salmon steak (with a fat free lemon - dill sauce).  And the entire meal took only 4 minutes to steam (to perfection I might add) in these funky little bags.  Ya pop the ingrediants in a bag, ya nuke it for the amount of time listed RIGHT ON THE BAG, and you get this great meal! 

Yeah, I know, I am easy to please.  It's actually one of the best changes that has taken place for me in last year.  In 2008, I just realized "it was all small stuff".  No really, it's all small stuff.  Even the big stuff - it's all just not worth getting worked up over anymore.  I have begun looking at life like a 5 year old and I am having a good time.  Which is actually one of the reasons why you haven't seen me here lately.  Just been doing too much lately. 

Well, I hope you are all having a grand new year.  I have a job interview tomorrow which I am hoping will lead to an offer.  Keep your fingers and toes crossed.  And say a prayer or two for me.

    HEY Future! Good for you! Here is recipe for Roasted Red Pepper Coulis - it makes a wonderful sauce to serve over your cooked spaghetti squash just like you would on spaghetti. One quarter cup is 67 calories, 4 grams fat and 2 grams fibre. (stolen from Weight Watchers)
    3 large red bell peppers
    1 tablespoon extra-virgin olive oil
    3 cloves garlic, minced
    1/2 teaspoon dried basil
    2 teaspoons sherry wine vinegar
    1/2 teaspoon salt
    1/8 teaspoon freshly ground pepper.
    Cook the bell peppers directly over a gas flame or under a broiler until blackened on all sides. Transer to a large bowl and cover with plastic wrap, or put the pepers in a paper bag and close; let stand 10 minutes. Peel and seed the peppers and place them in a blender or food processor
    In a small skillet, heat the oil over medium heat. Add the garlic and cook until lightly golden, 1 -2 minutes. Remove the skillet from the heat and stir in the basil. Transfer the mixture to the blender with the peppers. Add the vinegar, salt and pepper; process until smooth.
    I love it hot or cold. It can be used as a sauce or a dip for other fresh cut veggies.

    Bo!!  Yummmmmmm!  I will definitely try that recipe!  How did the kitchen come out?  I have to check out your blog to see the update on your love life (are you still with the hottie?) life, and kitchen....smooches!

    D6fer - how the kiddies (yeah, they not so kiddies anymore I know)?  Thanks for the welcome.  I will tell you a bit of a secret as to why I haven't been here in a while - lean closer..... closer.... now don't tell anyone, okay?  I haven't been here in a while because I am (and have been) happy!  Every time I came back and looked at the front page, I would see all these depressing headlines on posts and just couldn't stand to be sucked into the morass any more.  But I also missed a lot of the people I had learned to love to read (including you) - so back again!

    Hey Now CW!  Thanks for both thoughts.  I am really excited about this interview and will explain more if I wind up getting the job.  How are you feeling?

True to their word, on November 11th, Yahoo changed the homepage--yet again. I was ok with that at first because I knew how to go to the very bottom of the page and click onto "Classic Yahoo Mail" to get back to my familiar page where things were...
My own attitude adjustment....
I wonder where zayda has gone. It is strange to see this blog power house gone....
