It's a really simple recipe where you take a slice of bread, cut out a hole in the middle, break an egg and put it in the hole, and then fry it in a little butter in a pan until the egg is done.

What do you call this? Someone said that in the U.K. they call it an "Egg in the basket." and somewhere in the back of my mind I'm thinking something like "Egg toast."

Do you know what this simple breakfast dish is called?

Also, do you know any variations or improvements on the dish? What is it good served with? Jelly, butter, honey, plain?

We rented "V for Vendetta" the other night and they made this in it and it stirred a bit of controversy in our house.

SW: A "Bullseye"? Interesting. That would make sense.

Any recommendations for how to jazz it up?

    Thanks for commenting!

I have no idea what it's called-
How about some cheese melted on top of the egg?
Cheese and eggs work well together.

I can't imagine it with honey or jam....hmmm i think that's a strange combination with the egg.

Secret: I thought about cheese too, will have to try it and let you know how it turns out. :-)

i've heard it called eggs in a basket in both the midwest and the southern US

Hollandaise would spice it up. Hollandaise!
  • secretlife said on Aug 23, 2006....
oh yeah, hollandaise! I vote for that!

I've seen the movie, over and over again too. Haven't tried the dish yet, though I would really like to try that sometime.

I back up the cheese suggestion. Colby jack or maybe even a pepper jack would give it more flair. :)
  • Zayda said on Aug 23, 2006....
if you put hollondase sauce on it and poach the egg, essentially you are making eggs benedict. (a poached egg on an english muffin topped with canadian bacon and hollandaise sauce)

Zayda is correct on the name.

I think cheese (spicy pepper jack would be my favorite), diced ham and black olives would be yummy.

Are you a big egg fan? My mother-in-law makes this souffle-like dish that I adore. It has well-whipped eggs, cheese, diced red pepper, and breakfast sausage (I like spicy). Your pour the mixture in a glass baking dish and bake until the top is toasty brown. It keeps well. You can prepare it in advance--you simply slice and warm.

Jade: My wife makes a variation of the souffle-like dish you're describing, only she adds in some "Bisquick" to make a crust with it. Interesting, I think your mother-in-law's way would be really good, we'll have to try that.

I'm not a big egg person, but every once in a while, you know...

Thanks for the suggestions everyone, I really like the hollandaise and Canadian bacon idea. Shall we call it a "Bullseye Benedict?"

    :-D
