Hello all!

I am not a vegetarian but just love it, if it wouldn't be for my kids and hubby I would be a vegetarian without a problem! I'm just looking for different ways of cooking vegetarian (without TOFU!!!). Right now my two favorite dishes are vegetarian samosas with curry pineapple sauce, as well as vegetarian lebanese (falafel, taboule, etc...). I eat allot of salads and hate cooked veggies! Any ideas?

    you hate cooked veggies - even lightly steamed? I think many people hate veggies because most of the time they are over-cooked. Many people boil them, and thus make them bland and mushy. Veggies should be steamed EVER SO SLIGHTLY.

    My favorite - any mixture of 1 or 2 from each of the following categories:

    roots: potatoes, carrots, beets, etc.
    cruciferous veg: broccoli, cauliflower, brussels sprouts, etc.
    dark green leafy: kale, swiss chard, collard greens, beet stems and greens, bok choy, etc.
    asparagus is also good, not sure which category that fits into! and whatever else you could think of...

    Steam them JUST ENOUGH that they are edible, be very careful not to overdo it! For example, asparagus or broccoli should be BRIGHT green and still crunchy; if it looks olive, it's overcooked.

    Then lightly sautee plenty of garlic and onions which a bit of light oil... then add some more raw olive oil to the mix... sprinkle a bit of salt and pepper... and pour it all over the whole mix of steamed veg... simple and heavenly!!!

    Also, organic veggies are MUCH tastier, and more nutritious, than conventional.. makes a HUGE difference.

    Of course I realize my whole post goes totally against your explicit statement of hating cooked veg, but I figured I'd write it just in case you are simply having the common problem of overcooking the veg... :) if not, my apologies... :)

    That's my problem StrangeOne, what you just decribed is all that I usually eat. My husband does a great stir fry and never overcooks the veggies.

    Let me see if I could think of something else then... I'm not a very sophisticated cook, I eat a lot of really basic stuff like vege, tofu, grains, legumes. (no meat, but sometimes fish). You said no tofu though... how about tempeh? Personally I prefer it to tofu, because it's got a heartier, more satisfying texture. You can do many things with it, I like it lightly fried with barbecue sauce because it's kind of meaty. It's also nice with eggs.

    Also I love various combinations of grains and legumes. A lot of folks don't know all the different delicious varieties. For grains, there are several different types of brown/wild rice, there's kamut, spelt, quinoa, sorghum, millet, barley, etc... and for legumes, there are so many types of beans and lentils I can't even begin to name them... but usually any combination of any grain + legume lends itself very well to experimentation. They can be cooked into a soup or just a rice-and-beans type mix, or stir-fried with vegetables. Trying different mixes of spices (curries, for instance, or italian herbs, or anything else) can make very different dishes out of the same basic ingredients.

    I also like chick peas and lima beans a lot; chick peas lightly stir-friend with canned diced tomatoes, and maybe some yellow split peas, and a bunch of herbs like basil and sage is one of my favorites. Lima beans I like with olive oil and raw chopped scallions, as a side dish. Also dahl (which is a kind of hulled red lentil) cooks very fast and becomes easy to mush, so it's a nice alternative to mashed potatoes. And speaking of potato alternatives, mashed yams are great with garlic.

    Mmmm, I am making jasmine rice and split pea soup right now... it smells so good :)

    ALIEN, if you're having headaches than you're not replacing meat with the right things. A lot of vegetarians are unhealthy because they don't eat the right stuff (think lettuce and white bread! nyah). Try cutting animal proteins out bit by bit; try eliminating red meat first for a few weeks/months, then birds. See how you feel with fish, eggs, and some dairy as your animal protein. For your non-animal stuff, make sure you avoid processed food as much as possible. White bread, white rice, white pasta, that stuff is empty calorie junk food. Eat whole grains and legumes, they are very protein rich. Soy foods too, in moderation. The foods should be as much organic as possible.
