poll: cheese!

an off-hand comment by u-i recalled to mind an old poll as well as another, not as old one by botoni, that i think are old enough now that the subject can be revisited: cheese!

what cheeses do you love? and how do you like to enjoy them--on a cracker, with a glass of wine or beer, something else?

about cheeses & beer: some years ago, my favorite local microbrewery/brewpub used to have a special on their menu that paired 4 of their beers with cheeses. it was incredible: their honey wheat ale paired with goat cheese; their stout with a bleu cheese of some sorta and others as well.

so how about you?

    The least I can do is be first on your new ............... poll!!!  LOL  I love a good very sharp cheddar, plain, on crackers, in grill cheese, on hamburgers.. !  After that comes swiss, or anything that has garlic or horseradish in it.  I also like the caraway seed cheese.  Hot pepper cheese...... yes, I lke cheese. I don't drink alcohol, so a good diet coke has to do.

    You can imagine we have quite a few cheese options around here, what with the whole French thing.  But I have to say I don't branch out all that much.

    For everyday, extra-old cheddar.  Special occasions: Laughing Cow, camembert, or...there's something regional whose name I can't remember.  I think it's Oka but I could be confusing it with something else.  All great on crackers or bagels.

    I love fresh cheese either in curds or salt twists for snacking on.  One of the best fresh cheese brands has their HQ less than an hour from us so we get lots of good stuff!   Also very fun to stop by their in-house store on our way out of town for vacations!

    I also like Port Wine cheese spreads, feta, and bleu cheeses (I've been known to eat all of these straight from the container!).  For special occasions at our house I like to make steak with from-scratch bleu cheese sauce.

    I'm not much of a drinker so I don't know about cheese and beer/wine pairings.  I like to have cheese and crackers with a side of grapes (sort of like wine!) or kalamata olives.  Guess I have mediterranean tastes though.  Or spread on chunks of a bagel, if it's a spreadable cheese.

    I'm pretty straightforward with my cheeses...I like all things jack (Colby, Monterey, pepper, etc.), and I also really like Edam, and Gouda to a lesser degree.

    My stomach can't handle soft cheeses like ricotta at all, so I'm completely uninterested in that whole group.

    I like my cheese with a good plain cracker, sometimes with a bit of diced green olive on top of that.

    I like all sorts of cheeses, except brie and bleu cheese or any cheese that's got mold growing on it. I'm a fan of cheddars, Jack cheeses, gouda, and plain old American cheese slices! It's all good.

    my all around fav is parmasan....sprinkled on some olive oil and dipping bread in it...glass of wine please. Or shaved over a salad, just yum!! mixed in with eggs and sausage....
    Nothing is better than parma and spaghetti sauce???? that one is good with beer or wine. I can't think of a meal where I don't like parma!!

    I like all kinds of cheeses. 
     
    I love a good blue with candied pecans and dried cranberries on a green salad feta on a greek salad or on a meze plate
    crumbled blue cheese on a grilled steak
    sharp cheddar in a chowder
    fresh mazza with ripe tomatoes drizzled with olive oil, sundried tomatoe vinagrette and chopped basil
    an assortment of all types of cheese served with slices of apple and pear with fig jelly and crackers
    dill havarti with turkey and cranbury sauce on a sandwich
     
    The only cheese I steer clear of is goat cheese.  The aroma is enough to spoil any potentially good taste, though I have yet to find one mild enough for me.

    I nibbled on Swiss cheese last night!  I was shocked at that myself!  Smoked Gouda is a FAVORITE of mine.  I put it in home-made mashed potatoes and they're so good.  I don't eat mashed potatoes unless there's cheese in it.  It doesn't take much either.

    I never really thought about it.  I love mozerella because it's so easy to pull apart haha.  I also like colby.  Oh oh daily mentioned mashed potatoes I love them with Cheddar cheese, the same with broccoli and brussle sprouts.

    I'm pretty boring.  I like mozzarella, Monterey Jack, Colby-Jack blends, and smoked Gouda and that's pretty much it.  I don't care for American, cheddar, Swiss, and anything crumbly and veiny, unless they're really well-disguised in a recipe.

    Oh, Ed, I've had to relent my love of cheese to a large degree in order to lose my excess weight.  I do love brie on crackers with a lovely glass of merlot though. . .oh, I should not be thinking these evil thoughts!! LOL!

    I like many different kinds of cheese.  My very favorite though is longhorn cheese toasted on bread in the oven.  My mom used to make that as a quick breakfast on cold mornings when I was a kid.  It was so melty good.

    I absolutely adore blue cheese with chicken.

    Brie with a cood champagne

    Another is cheshire with a good dry peppered cracker.

    Then feta with olive oil driselled tomatos on fresh bread

    Another favourite is a three cheese mash potato, hard aged cheddar's of various tang.

    Ohh also I love to nibble on Goats cheese with pasta (linguini) and herbs... nibbling would be an understantement, more like a big nosh out.

    Ed........you know probably what i am going to tell you, right?....;-)

    Hands down....my fav cheese is caciotta, an Italian semi soft cheese...delicious by itself and with everything....there are so many different kind of this cheese in Italy depending by the regions.....

    Parmesan is my safety blanket because i use it everywhere....but i love it sliced accompanied with olives, prosciutto,  sliced pears with balsamic vineyard and strawberries.....slurp...

    Then on top of my bruschetta or my tomatoes and basil i always use mozzarella.... ...the fresh kind..still stilling water....and how can i forget provolone and Asiago?...

    oh my.....now i am hungry...yep..time for dinner..and cheese...lol....

    Ginger: I was just thinking about strawberries and balsamic earlier today. Now, I'm going to ahve to try the parmesan with sliced pears and balsamic. (It made my mouth water to read that.) :)

    Vermont Extra Sharp--that big white block of heaven...  I can't eat much of it at one time, but it doesn't last long in my fridge.  I like it on anything or by itself, but usually melt it on baked potatoes, pasta or crackers.

    Much like pickers and Zayda, I can't really think of a cheese that I don't like. I've even started to appreciate blue cheese -- when I was a kid my only exposure to it was in salad dressing and I thought that it smelled and tasted like vomit. Fortunately I've since learned better, and I love blue cheese crumbles on my salad.

    My favorite cheeses, though, are probably brie and camembert. I first tried them in French class all those many years ago. I've still only had them a few times since, but I absolutely adore their creamy texture and their crusty exterior. Either by themselves or on a cracker or on French bread....

    type of cheese? well... most of the time i like the thinly sliced ones. at other times, the rectangular slab ones (so easy to sink my teeth into), and the round ones, and the oval ones.

    in my cooking i sometimes use the grated ones. and there are weird moments when i like the crumbly ones that stick to my fingers and then i will have ask someone to lick 'em clean, ya know... lol.

    how do i like to enjoy them? dude, what kind of question is that? lol. i enjoy devouring all kinds of cheese anyway but inside out. and sometimes i enjoy even that too... :-)

    Bree is good but their is one that comes with an apricot topping and a pistatio one that is just delish that i've tasted. We get it every year for Christmas and it is wonderful on the Watercress crackers and with a glass of White wine. Forget about it. I think my father-in-law's board member gets it from a place called the Cheese Factory where they make gormet cheese.

    Just about any kind of cheese is ok with me. I tend to overeat the stuff so I keep it down to a minimum (I put on weight just by looking at food).
    The flavored cheeses are my favourites. I forget the brand name but the roasted garlic (with or without herbs) totally fascinates me and I like the spicy cheeses also.  The Habanero cheese is spectacular....it's spicy enough to bite back when you taste it.

    ed, regarding goat cheese.  Yes, it's a bit "gamey" for me.  I have had one that was a mix of cow and goat milk that was tolerable. 
     
    They have this really rocking cheese store at the Marketplace next to Pier 39 in SF that carry an amazing spread of cheeses, all of which you may sample.  I usually end up spending an hour or so there and come out barely able to waddle over to the chocolates store across the hall. :)  No need to buy lunch after such a visit.

    i just realized i never answered my own question! OK, i've never encountered a cheese i didn't like, at least that i recall. there's a nearby artsy community that the mrs and i sometimes visit which used to have this cheese shop, and the proprietors took a perverse glee in practically browbeating people into trying new cheeses. it's been gone a few years now and i still miss it.

    i usually like to have cheese with crackers of some kind (carr's table water crackers are my all-time fave if i have 'em) and a glass of white wine, usually a pinot grigio or sometimes a chardonnay.

    but if it's a bit cooler out (IOW, not what i consider white wine weather), i'll definitely go with a beer & cheese pairing, such as a bleu with a good stout--lately, i've really been into an organic oatmeal stout but i can't remember the name of the brewery. that's actually my favorite stout.

    there's plenty of conversations on SC about the more serious things in life. and most of the people in this conversation also discuss them.

    I've just arrived here and am once again amazed at where some posts go.  If I may I'm going back to topic.  I'm hardly an expert on cheese but I do love it in any form I've discovered.  Among my favorites are raclet, German butter cheese, a melted camembert with some toast rounds and a dab of raspberry coulis, Norwegian gjetost.  Lately I've been draining fresh plain yogurt for 24 hours and using the resulting cheese as a spread on scones with some fresh berries.

    Hey Ed, raclet is a Swiss made cheese usually.  Its medium hard yellow/white and tastes delicious melted under a broiler and eaten on toasted bread.  The Swiss actually have a machine specifically for making raclet.  The underside is a broiler and the upper is a grill on which to cook thin slices of sausage meats such as salami.  It's traditionally served with small boiled potatoes.  Almost as much of a tradition as Swiss fondue.
