I'm not much of a liver fan unless its duck liver pate or really good freau gras..... blech alright.
Why not just make up spinach soup ginger? puree'd with onions garlic and a little lemon juice its iron plus!
Mushrooms? mushroom soups good and mushies have great iron content, hmmm what else there has to something better than liver yuk!

Are there other foods with as good a result, or is it really the best option, unfortunately? You have my sympathies and I totally understand needing that bottle of wine to wash it down.
oh wow..that stuff like bull's balls,cow's tongue and fried sheep brain..where did you eat that? where you travelling and trying some local dishes? or were you left on some abandoned farm and had no other option than cutting.....well..i can't imagine you'd choose those parts of the animals then...have no solution to make liver taste better..liver reminds me of hannibal lecter..guess that's an image that's not helping either..

Ginger....I'm listed as being one of the few humans who actually like liver. Here is a recipe that you might try.
Slice liver in very small strips, bread it with flour and fry it in butter quickly until it is just cooked through. Season with salt and pepper.
Fry up a sliced onion and some chunks of apple (like Granny Smiths).
Mix the cooked liver in with the apple and onions to heat it.
You might be surprised at the light taste.
Here is another:
Fry some chicken livers in butter with onion and a bit of garlic as well as a few cracked pepper corns. While the mixture is still warm put it in the blender or food processor and add an egg or two. Pour in just a dash of red wine. Press the mixture into a mold or even just a bowl. When it's well chilled serve it with some nice crackers or crustini and a dab of cheese - preferably blue if you like it.
Pork liver can be done the same way. Just for your info pork liver is the richest liver source for iron.

I'm glad others had advice, 'cause I have none....But I feel for you! the most disgusting I ever ate was "chittlens" and then because I was appropriatley starved at the time...ha....
Maybe try some liver with fava beans...and a nice Chiante? (sp) (If you need to be strapped down with a full-face mask, please forget you met me.....ha!)

Ginger, I'm with you -- liver is the work of Satan. Yeccch! I won't eat it, I won't even cook it. It smells as disgusting as it tastes. Pooey.
