This is my version of a recipe gleaned from a pioneer cookbook.  It's very tasty and hearty and its easy to expand.

SAURKRAUT CASSEROLE

1 Quart saurkraut (rinsed and drained)

1 cup raw rice

3 cups water

1 small onion chopped

1/2 cup butter

4 slices bacon diced

6 to 10 large sausages such as bratwurst, italian (mild or spicy), farmers, etc.

Put all the ingredients in a casserole with the sausage on top.  Cover and bake in 350 degree oven for 1 hour.

If you' d like to mellow the flavor a bit add one or two pared and chopped apples.

Serves 4 to 6.

    Now, for the chuckle of the day.  Yesterday when I made this recipe it did seem to taste a bit different from previous times.  We ve now discovered that the saurkraut can be omitted entirely.  (I found it this morning still draining in the sink!!!)

    Skald....I wonder if you know it by a different name. It's simply pickled cabbage. If you have a store near by that specializes in German foods you would certainly find it there.

    Botoni.  We have no stores that specialize in German food but I have had sauerkraut in Germany.

    CW....How interesting that dish would turn up where you are.  I found it in a cookbook of pioneer recipes from this area.  Good hearty food recipes get around I guess.
