as a foodie, among my food love affairs is cheese. all kinds of cheese, actually, whether those cheapo processed cheese food products that come individually wrapped or a high-end ripened triple-cream. i recently discovered a cheese that blew my socks off: smoked bleu cheese.

hard cheeses, bleu cheeses, ripened cheeses: it's all happy-making, far as i'm concerned. gruyere's a thing of beauty, swiss makes me happy w/ its warmth, cheddar's familiarity is powerful, parmigiano reggiano is...well, hell, it's freaking parmigano reggiano.

but enough about me: what about you? what cheeses do you love?

I love cheese too! Living in Paris was like heaven on earth. My favorite cheese is Boscetto truffled cheese (it actually has truffles in it), followed closely by Brillat-Savarin triple cream cheese (named after the famed French author of La Physiologie du gout (Physiology of the Taste). For everyday cheese, I like an extra sharp NY cheddar (VT can keep their cheddar), or an herbed goat cheese (soft and spreadable). What a great post, silver; thanks for bringing out the cheesy in me!

I haven't had a lot of cheese. Sharp cheddar, string, guda, colby, montery jack.

Colby jack - those thin round deli slices especially. YUM! I also like monterey jack, pepper jack, mozzarella and havarti (sp?). I don't like spreadable cheeses for the most part; they gross me out. And ricotta hates me whether I like it or not.

Silver: You just discovered smoked blue cheese??? [looks at you askance] Smoked blue cheese is the tops of my cheese list. For me, there is absolutely better. Second on my list is blue cheese--the depth and tangieness of it speak to my soul. (If by the way, you want to try something absolutely wonderful, take crusty dark whole grain bread slices, add alernating layers of medium-thin slices of crisp, ripe granny smith apples and slices or crumbles of blue cheese. Grill the whole thing, topped with a second slice of bread. It's just....mmmmmmm......) I also love smoked gouda, and, yes, gruyere is a thing of beauty. The tangy warmth of Swiss is comforting to me and transports me back to my grandmother's kitchen. Extra sharp white cheddar cheese has always been for me, that little bite I grad from the fridge if I'm up at 3 a.m. and cannot sleep. There is something about it's solidness and bite that reasurres me. Fresh, soft mozarella--not the kind tha has been shaped and molded into a chunk or a half moon, but the fresh, soft, damp that you can get at your local Italian deli. Soft goat cheese holds another special place in my heart. I also have discovered, here in my area, the goodness of Amish Onion cheese. Pepper-jack brings back memories of my childhood and my parent's bridge nights. And on trips to visit my in-laws in Utah, when we drive to visit the grand-in-laws, we always stop in this tiny town along 1-15 toward St. George and buy cheese curds, or, as they call it "squeaky cheese". It does squeak when you bite it. Let's face it; I could have an affair with cheese.

I've always said, if there is melted cheese on it, I would have no problems eating it, except moral problems (melted cheese on a human beings hand).

melted cheese on a human beings hand? gosh, if i had to eat or lick cheese like that, damn i will never ever take cheese again~ i always love cheese till today.. no matter what brand or type or cheese and i'm sure there's lots of cheese lovers here. if only the sea is actually, melted cheese.. gosh, i will bath in it!

Cheese has always been a favorite ingredient of the most well renowned chefs. From time to time, I really crave the mozarella cheese stuffing on the edges of a Pizza Hut stuffed crust pizza. Man the description alone makes my mouth water. :X

Mmmm....CHEESE!!! Me being french I just love it!!! I eat a good real swiss cheese fondue from time to time with a good bottle of wine! There is nothing better than a triple creme brie on a baguette with some hungarian salami! I have cheese with my children for supper at least once a week, we just love it! I don't like goat cheese, it's too yucky for me but I'll eat any other cheese! Or just at home with my husband at night we open up a bottle of wine and nibble on cheese. I live 5 mins walk from the farmer's market and I buy fresh cheese at least once a week! $$$$!

Sorry, guys--I love cheese, but I hate bleu cheese. Cheese is a constant staple in our household. We buy several pounds at a time. We eat it on everything & even straight from the block. My all time favorite sandwich is composed of very thin white bread, shaved Cajun turkey & eye-watering spicy pepperjack cheese. Mmmm...I am getting hungry just thinking about it!

Ohh i like cheese tooo. But i did not really get into it til i was out of secondary school. I guess my taste buds just wern't up to it. I have this thing for Brie, it has to be french and slightly warm. However in recent months i have found, i can eat it very much - nor many cheeses. Funny how so many of us love it but it hates us!!!

i think i mentioned in a comment in another blog one of my very favorite sandwiches: a loaf of ciabatta, with a proper basil pesto on the top and bottom, dressed with prosciutto and slices of fresh (real) mozzarella. in hot weather, it's fantastic. ed

Ever since my days in Leete hall at Penn State Main Campus, where I lived within 100 feet of The Creamery (Penn State's animal husbandry school... they create all the milk, cheese, ice cream, etc for the entire school and you can buy it cheap in the creamery's store!), I have had a nasty love affair with Muenster Cheese. And, while there are ||{1}||, the cheese at PSU was closer to the European style, IMHO. I love it. By the way, can someone please tell me how to direct people to my pages? I dont want to be a post whore (I am seriously SO sorry, really) but I am lonely and love feedback. lol. Again, really sorry. -bordy
