The lunchtime options around me at work are difficult to obtain and
pricey.  This inspires me to brown bag and awful lot.  We are permitted
to store food on site so I stock it with food that I hope won't damage
me much.  Prepackaged food is pricey as well and the costs add up if
I'm to actually satisfy my appetite. 

While attempting to increase my HDL cholesterol  (a questionable need,
stay tuned.) I wanted to increase my vegetable intake.  Higher fiber
food slows down the release of sugar in the blood stream.  sugars can
be converted to triglyceride, a fat building block that appears to be
instrumental in the manufacture of LDL cholesterol which is, so far,
still an enemy of mine.  Foods that don't increase blood sugar very
much are called "low-glycemic".  Flour products are the opposite.  HIGH
glycemic.  They promote heart disease and stroke.


Soups were getting on my nerves so I ventured into the no man's land of
the shopping isle eschewed by my mother when I was a boy.  I began
purchasing canned vegetables.

My mother wrote off canned veggies partially due to my father's
distaste for them.  They are all you get with school lunches though and
it occurred to me one day that their flavor never bothered me then, so
it was time to reacquaint myself and leave my prejudices behind.
Green Giant fresh picked sweet corn is rather tasty but almost any
brand of green beans, peas, or beets will suffice.  This added some
variety to my lunches.  I took up an old recipe my father stood by.  A
can of Garbonzo beans (aka chick peas) doused with Italian Dressing. 
Very simple and straightforward.  It was this idea of seasoning beans
that may have inspired my mixing the garbonzos in with the Masala Chana
I buy.  It is a dish made with Chick peas in an Indian sauce (curry
based, I think.)  They are a bit pricey so when you add a full can of
generic chick peas to it, you've tripled the amount of food at a very
small price.  I found you could also make the canned chili go a lot
further using a can of kidney beans.

This had been working out well enough when I spied some canned
vegetables I hadn't noticed before.  They were stocked with another
brand "Glory" that I'd wanted to try but they are laced with trans fat
and I won't give money that keeps these nasty chemicals in our food
supply.  The cans were a dull light olive green or ecru with a pale
yellow brand name.  Asked to make an uglier can in which to put food,
I'd be sorely challenged.  Dubiously, I picked up a can of "Hoppin'
John".  A dish I'd never heard of with black-eyed peas, tomatoes, and
jalapeno peppers.  I like black-eyed peas enough to take the chance on
this ugly can with the odd recipe inside.

It was a VERY different lunch choice; tasty, packed with fiber and
vitamins while serving relatively low calories.  It was a winner.  I
tried more varieties of canned veggies from this strange company with
the ugly cans, no marketing savvy, and the unusual recipes:  Mararet

lady can be proud. 

The field peas with snaps are too salty but good if you're sure to
drain them really well.  Other than that I enjoy everything she makes
that I've tried.  Sadly, one of her greens recipes has trans fat but
none of the others do. 

Most recently, I've used Margaret's well drained collard greens to
spread out another Indian dish called "Palaak Paneer", a curried spinach
with some cheese cubes.  It was better than the Palaak alone.

For those looking to enrich their dinner and lunch tables, save money,
tame diabetes or promote weight loss, a stroll through the canned food
section, sharp on the lookout for the ugliest canned food known to man
could serve you well in more way than one.

DIAGNOSIS: Unknown injury to right knee, possible impact from small stumble onto
landing of concrete stairs 2006. Injured knee joints from sprinting.
ONGOING TREATMENT: Tri-Annual dental visits. Cycling / Spinning for strength training.
DRUG REGIMEN:  Aspartame.  (3 diet sodas daily)  Caffeine (three cups of coffee daily.  One cola.)

PROGNOSIS FOR FOLLOWING WEEK:     Slow improvement of knees.  Good health.
POTENTIAL TREATMENTS:   Fish Oil supplements.  Leafy greens.  Axillary vacuum curettage.

    I don't mind canned beans, but I can't stand canned corn, green beans, carrots, or anything like that.  I usually get frozen.

    I'm always looking for new vegetables to try.  The latest thing I tried was green olives stuffed with blue cheese.  I thought they would be nice for a treat now and then since they were a little pricey.  However, I failed to notice on the label that they are packed in sunflower oil.  That slick textured killed for me what would otherwise have been tasty.

    I really liked your post.

    So, you're not really dying at a faster rate then the rest of us huh? This is a good thing !  I remember hearing about a man who took the podium in a large hall, spoke directly into the microphone and said; Everyone in this room is going to die ! He just stood there after saying that and the crowd began to mumble and panic. He like you was making the point that we are all going to die, and something tells me I didn't have to explain that to you.....haha.
     
    Ok, canned veggies. There's an ugly rumor going around that canned fruit and vegetables are high in all their own nutrients just like fresh fruits and vegetables. This because of the location of most canneries and that they are canned very quickly. I love canned pineapple, sliced with the hole in the middle, probably allot of sugar. I eat whole cans of the stuff, I like Bushes baked beans too. When I was a kid, all we ate was Campbell's pork and beans, always had a lump of white fat in it. The Bushes people at least put a lump of pork meat in their beans. Interesting huh.......? I've never seen the brand of canned veggies you're talking about.

    i buy canned vegetables- my son loves them all, and i'll do just about anything to get the kids to eat vegetables.
     
    i prefer frozen myself.
     
    but i do love canned beans.  i'm a huge fan of chick peas and canneloni beans  - kidney beans, black beans.....mmmmmmmmmm
    i use the chick peas and canneloni in a poor man's italian dish called pasta fragiolle.  you haven't lived til you've made yourself a pot of pasta with these beans mixed in!

    Not to throw anyone under the bus, but I'd like to point out that this sentiment was humorous in nature, methinks... in case Sheltercrow drops by again

    Anyways, on to comments:

    Pickersplock:  Frozen was my mother's standby and pretty much all we eat at home.  Fresh goes bad in the frig before we get around to cooking it.  Try Margaret Holmes Butter Beans if you can find them.  They're impressive.

    Creativewoman:  If it's not too late, you could drain teh oil and roll the olives out onto a plate lined with a few sheets of paper towel.  Olives should never go to waste.   Great to have you aboard, CW!

    Mobil:  Thanks for the kind words.  I had a woman wish death on me weeks ago.  (Not as interesting a story as it sounds.)  So far, her wish is unfulfilled.  My name reflects my comfort with mortality, so yes.  I would be unfazed by your speaker.  Fear of death can make people do very foolish things.  I realize this more and more as I write this blog and look around me.
    As for veggies, I have heard the same.  Canned veggies are almost as good as frozen and about as good as fresh.  Better, if you leave them in your frig a few days.  The Pineapple has fiber as well as the sugar.  I wouldn't sweat the sugar too too much unless you're diabetic or borderline.  Get a Hemoglobin A1C test if you're concerned.  Bush's Bold and Spicy beans are an unusual break from the standard fat-cube topped variety if you've never tried them.  Toss in some brown mustard to a can of standard stuff to cut the sweet if you prefer less candy-like flavor.

    Secretlife:  Hi, babe!  (Can I be so informal?)  I have to try the pasta fragiolie someday if you rate it so highly.  You are fortunate to be able to feed veggies to your rugrats so easily.  I cringe when I see the dinners most folks serve their tykes.
    Meat starch meat starch meat starch.  * shudder *  Obesity epidemic anyone?

    my oldest is 18 now.  and all of a sudden, after a mostly 5 year hiatus from anything vegetable, she back the past 3 months on lots of them.
    she's been on this health diet.  soy milk, tofu, lots of fish and tons of vegetables.
    her boyfriend got her on a kick that she is enjoying.  and she's actually learning to cook!  hey, he has made progress where i've failed......
     
    i always make vegetables- always have.  just like i always have fruit in the house.
     
    eventually i think the kids find their way back to things....
