Ingredients:
- 300g (12 oz) boneless, skinless chicken breast
- 1 medium apple (I used Yellow Delicious)
- 100g (about 1/2 cup) chopped pecans *my grocery store only had 100g packages or else I would've used a true 1/2 cup, 125g.
- 1/2 cup mayonnaise (you can use low-fat mayo but I don't care for it myself)
- cooking oil
- lemon juice, plastic bag or container
- spices to taste
Preparation:
Cook the chicken in a skillet with the oil and any seasonings you like (I used orange zest, sage, and coriander). Dice the apple into very small pieces and seal it in a bag or container with lemon juice, to prevent browning while you finish up. Dice the chicken into small cubes. In a serving dish or large bowl, combine chicken, apple, pecans, and mayonnaise. Add salt, pepper, and other seasonings to taste and stir until evenly mixed.
I split mine into five servings, one for each day of the week. Each serving was around one cup, give or take. I rounded that out with a slice of whole-grain, no added fat/sugar bread; some flax meal; and a sugar/fat-free yogurt cup.
