I have always loved cooking, baking & sharing that with my children.
I cook fresh, rarely frozen of processed foods...canned beans are ok..since I often hate that process, BUT do cook them from dried beans 89% of the time in my Puerto Rican dishes.
This is the main courses I serve in my home Puerto Rican dishes.
Also cooking Italian, Chinese, Cantonese, Japanese, Aussie, Scottish, Irish & of course good ole American Cooking *BBQ brats, burgers, cold salads & the like*

1. Which chef *if any* has made an impact in your life when it comes to cooking/baking?

2. Have you ever wanted to learn how to cook but afraid you would burn the house down?

3. Would you take lessons if they were offered in your home for a small fee?

4. How about taking a local day trip to your local restaurants for a crash course on how to pick out the best of everything ie. fresh fruits, veggies, meats & breads?

5.What does a normal family dinner consists of in your home? List menu please share! *curious to see different people/families & what they love*
I know I put a lot of questions here..but I am new so if you don't want to answer all thats ok. I just am in a rut & feel that maybe I can jump into providing some low fee cooking classes in the home for those that just don't have the time to travel & get home to cook the meal that they just learned.

    I think my favorite cook is probably Rachael Ray. I love her 30 minute meals show simply because she makes such fabulous, hearty meals in such little time.


    I'm also a fan of Guy Fieri, the first season winner of the Next Food Network Star. I love his zest for cooking and his flair. And I love how creative he is with such simple and basic ingredients sometimes.


    No, I've never been afraid to cook or learn to cook for fear of burning the house down. I've been cooking since I was in my teens. And I'm actually pretty darn good at it.


    I probably wouldn't take cooking lessons in my home as I am already a pretty darn good cook. I would probably take more specialized cooking classes through a cooking school, or maybe cake decorating lessons because even though I'm a good baker, there are some decorating techniques I would learn to love.


    No, I wouldn't take a crash course on how to pick out the best of everything because I really already know how to do that.


    Typical meals in our home are really varied. Last night's dinner was grilled chicken breasts simmered, along with fresh chopped tomato, in a Parmesan-Garlic sauce and served over rotelle pasta. The chicken and sauce were topped with a chiffonade of fresh basil just before serving.


    The night before, we had chicken meatball subs and salad. The chicken meatballs were made from scratch (ground chicken, egg, bread crumbs, grill seasoning mix, Parmesan cheese). The sauce was stewed tomatoes, chicken broth, and garlic. The meatballs and sauce were placed on toasted buns, topped with Parmesan and Mozzarella, and then broiled to melt the cheese. The salad was simply chopped Roman, chopped green and red peppers and an oil and vinegar dressing.


    I haven't decided what we are having tonight, yet. Perhaps chicken enchiladas.

    I had to put this..since I just watched my weather...
    OMG..the wind is 50mph...the temp is -19 wind chill is -20 to -30 below windchills...on  top of the 2 feet of snow that melted in ONE DAY! Is now a sheet of ice....omg...I LOVE WISCONSIN!

    I will actually post my own answers tomorrow...dealing with the seriously cold, windy & dangerous weather here in Wisconsin & need to get a little rest before my day starts again in about 4hrs...

    There is a recipes page, per se, but if you do a tag search for recipe or recipes, you should find quite a few blog posts with recipes in them.


    We ended up not having chicken enchiladas. Instead we had leftover homemade chili. The rainy and gusty wind here put us in the mood for chili, which is somehow always better the next day.

    I like Paula Dean.  (Course, I like her because I cook in the same genre {southern}  and because shes' a southern woman like me.  I ate at her restaurant in Savannah once - absolutely delicious, the service was fabulous, and the cleanliness impeccable.)  I adore Alton Brown.  And Mario Batali, Giada De Laurentiis, and Masaharu Morimoto (ohhhh to make sushi like he does!)
     
    There are very few chefs I don't like.  Some I don't like to watch cook though.  Wolfgang Puck drives me a bit batty, but I'd give my right ear to cook like him.  Same with Emmeril - don't like to watch him (I hate that high pitched grunt of his) but loving what I learn about cooking from him.
